Cooking For One is Not an Easy Task

Since I graduated from college almost four years ago I’ve lived by myself in my cozy little apartment.  Shortly after moving I realized that a person can’t live their life on the college diet and cooking a meal was inevitable.  This is also a good time to add that I’m a picky eater.

Now, during my college years I cooked a few standard things- Mac and Cheese, Spaghetti, and Hamburger Helper. The rest of the time I lived off sandwiches, cereal, campus dining or I would go over to my boyfriend’s place for a meal.

My current menu consists of spaghetti, tacos, chicken stir fry, grilled BBQ/ranch chicken wraps, mac and cheese, hamburger helper, meatloaf, soup, tuna casserole and BBQs.  The occasional night out or pizza is thrown into the mix, but those are the standard menu items.  Even though each one yields food for about four it provides me with dinner one night and then lunch and dinner the next day.

I enjoy the menu listed above, but there are times where I would like to enjoy a yummy meal.  I choose not to make some of the meal I crave because I would be left with so much food.  For example, I’ve really been craving roast beef, potatoes and carrots, but how do I make that for one?? I’ve gone on a few cooking websites, but many of them don’t offer good tips for cooking for one.  Do other people living by themselves have this same problem or did a miss a step somewhere in life??

I could really use some advice, so feel free to answer the follow questions in the comment section.  Have you had to cook for one? What sites do you find helpful when you’re cooking? Do you have any meals that are great for one?
